Crispy Grilled Chicken

Introduction:

While searching for a new recipe online, we stumbled upon one that wasn't just a list of ingredients and instructions; it was a narrative. Page after page, the recipe creator detailed the journey, the inspiration, and the heartfelt reasons behind crafting this culinary masterpiece...and we f**cking hated it!

Don't worry, we won't put you through that. Here is what you need to know. 

Ingredients:

  • Whole fresh chicken wings
  • ½ cup corn starch
  • Killer Hogs BBQ Rub
  • Spicy Garlic Wing Sauce:
  • 6oz Killer Hogs Hot Sauce
  • 1 stick butter
  • 1 tablespoon granulated garlic
  • 1 tablespoon honey
  • 1 teaspoon granulated onion
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon corn starch
  • 1 teaspoon water


Cooking Directions:
1. Start with whole fresh chicken wings and then separates the wings from the drumsticks.

2. Fill a Ziploc back with ½ cup corn starch and BBQ rub of your choice. Throw a few wings in at a time and shake them up to get that corn starch coating all around each wing.

3. Pull the wings out of bag and place them on a drying rack or cutting board. Sprinkle a little more seasoning over them and let them air dry for a few minutes.

4. Using a charcoal grill, light the charcoal and put your grate back on. Put the lid on with the vents 100% open on top and bottom.

5. When the charcoal is ready (gray/white color – should be about 20 minutes) place the wings along the outside of the grates, not directly over the vortex. Place a wood chunk (Malcom uses hickory) directly over the vortex which will give you a good smoky flavor. Put the lid back on and let them cook.

6. After about 10 minutes, remove lid and flip your wings and replace lid. After another 10 minutes, flip them again. Replace the lid and check the wings every 5 five minutes until done (approximately 30 minutes total)

7. Let rest for a few minutes and prepare your sauce of choice.

8. In a small pot over medium heat, melt the butter and add the first 6 ingredients of the Spicy Garlic Wing Sauce and bring to a simmer. In a separate bowl, combine the corn starch and water and slowly add to the sauce while stirring. Allow the sauce to reach a slight boil and remove it from the heat.

9. Toss the wings in a bowl with the sauce until fully coated.
